Crafted in La Boissière-École, on the edge of the Rambouillet Forest, this cheese embodies a modern take on heritage, symbolizing an agroecological revolution while paying homage to the iconic pavé (cobblestone)—a symbol of Parisian history and revolution.

Made using traditional methods, Pavé de Paris is a true artisan product, where every step of the process is carried out by hand, from curd stirring to labeling. The curds from two separate cheesemaking processes—one from cow’s milk, the other from goat’s milk—are mixed just before molding, creating its signature marbled yellow-and-white paste beneath an ashed rind.

  • Texture: The dense yet supple paste showcases the contrast of creamy Jersiaise milk and delicate goat’s milk, giving it both structure and finesse.
  • Flavor: The rind offers bold, mineral-driven flavors, while the interior is fruity, lactic, and subtly tangy, evolving with age. The interplay between the nutty richness of cow’s milk and the fresh, slightly citrusy notes of goat’s milk creates a complex yet harmonious tasting experience.

Aged for approximately 3 months, Pavé de Paris reaches its peak balance, but it can mature further for those who appreciate deeper, more pronounced flavors.
