Lincolnshire Poacher is a traditional English territorial cheese in the Cheddar style, made by Simon Jones and his family on their fourth-generation farm in Lincolnshire, near the scenic Lincolnshire Wolds and close to England’s east coast. The family has been farming this land since 1970, and Simon began cheesemaking with the vision of combining classic English technique with a distinct sense of place.

Unlike traditional clothbound cheddars, Lincolnshire Poacher is aged without cloth, developing a natural, firm rind and a distinctive flavor profile that sets it apart in the world of British territorial cheeses.


Flavor and Texture

 

  • Texture: Smooth and dense, yet creamy on the palate, this cheese slices beautifully and softens just slightly with warmth.

  • Flavor: The cheese opens with a gentle sweetness and evolves into fruity, tropical notes, often likened to pineapple or overripe melon. Underneath that brightness is a rich, buttery depth with an occasional sharp, savory kick, making it both approachable and deeply satisfying.

Aged for around 14 to 24 months, Lincolnshire Poacher’s flavor intensifies over time, offering layers of umami, nuttiness, and caramel in the more mature wheels.
