Parmigiano Reggiano (par-mu-JAR-no reh-jee-AH-noh) DOP is known as the king of Italian cheeses. We like to work with Caseificio di Cavola because their dairy is still in high altitude near the farm.
A little history about "933" Parmigiano Reggiano from Caseificio di Cavola
The dairy “ Caseificio Cavola “ was born in 1929, in Cavola, a small village in the mountains of Reggio Emilia.
In this paradise of meadows, about 900 meters high, they only farm our fields with animal manure, avoiding chemichal fertilizers and pesticides.
This results in better, healthier fodder, a wholesome diet for their cows, and high quality milk, that puts their Parmigiano cheese a notch above all cheese from the plain.
Through the decades and generations, Caseificio Cavola 993 has grown, refined, and improved production, while staying rooted in their much-loved tradition.
Number 993 has long been known to be synonymous with the highest quality mountain cheese.
True Parmigiano Reggiano is a revelation of taste – a succulent, moist texture with nutty notes & a complex fruity sweetness – delicious with a glass of Prosecco.
