Moulin des Moeres Gouda is the result of a collaboration between cheesemaker and affineur. Cono Kaasmaker, the cheese maker, crafts fresh wheels of gouda in North Holland – a region renowned for its sea-clay fields, rich in naturally occurring sea salt that imparts a distinctive flavour to the milk of the animals that graze there. Losfeld, then hand-selects wheels for maturation and ages each wheel for a minimum of 24 months in her warm maturation rooms (+14°C.) In terms of gouda maturation, his method is unique. The higher temperature and humidity encourage complex flavours of roasted hazelnuts and dark caramel to develop whilst maintaining the moisture in the cheese. Tyrosine crystals emerge and fleck the paste, providing a satisfying crunch.

L'Amuse Signature Gouda is one of those lesser-known gems that we love people discovering. Its complex flavours with that hint of caramel is such a tasty delight.

A truely authentic Dutch Gouda exactly how it’s meant to taste …absolutely delicious it’s one of our favourites

We waited years and years to be able to sell L'Amuse Gouda at Harper & Blohm and we both know it was well worth the wait. Betty Koster, oplegger (person who matures cheese) of L’Amuse cheese shop, matures the Gouda for a minimum 24 months to get that complex nutty/caramel flavour profile.
