These rillettes are made using free-range pork shoulder, slow cooked with aromatics to make a rich and delicious spread with crusty bread.
City Larder Free Range Pork Rillettes are made using pork shoulder, slow-cooked for several hours with carrot, onion, celery and garlic before it is pulled apart, jarred and topped with the cooking juices. This rich spread eats particularly well with cornichons or pickled onions. Rillettes are traditionally made from confit meat or fish, which is then shredded or chopped and preserved in jars. City Larder Free Range Pork Rillettes are best served at room temperature, with fresh or charred bread.
Goes well with: full-bodied whites such as Chardonnay, as well as rustic red wines like Nebbiolo, Hacienda el Olmo Crianza Rioja
