The Tomme de Chèvre au Brebis is produced by the dairy Agour, which buys milk from local producers. Some of these farms are located near the Spanish border, where the sheep and goats sometimes graze on pastures in Spain. This cheese is typical of the Pyrenees, with a semi-firm texture. Its flavor profile offers a delicate floral sweetness from the sheep’s milk, combined with a tangy acidity from the goat’s milk. This creates a balance between the smooth richness of sheep’s milk and the lively character of goat’s milk.
A little history about Tomme de chevre Brebis
Agour is a cheese company founded in 1981 by Jean Etchelecu in Hélette, in the Basque Country of France. Known for its traditional Basque cheeses, Agour specializes in Ossau-Iraty, a sheep’s milk cheese with AOP (protected designation of origin) status. They work with local farmers, some of whom are near the Spanish border, allowing their sheep to graze there.
In addition to sheep’s milk, Agour also uses goat’s milk and occasionally cow’s milk in their products, expanding their range of cheeses while preserving traditional methods. Agour produces cheeses with unique flavors, like Espelette pepper, and even Basque butter.
Over the years, Agour has gained international recognition, winning numerous awards for the quality and craftsmanship of their cheeses, making them a key player in the Basque cheese industry.
