Tomme Crayeuse is a lactic set tomme, made in the Loire Valley region and aged in Savoie next to their cousin Tomme de Savoie.
It is a chalky tomme with three differents texture, the rind is mushroomy, underneath the rind is the creamy part and the center is chalky.
The name Tomme Crayeuse means Chalky cheese. it has some lemony and mushroomy flavour.
A little history about Fromagerie Schmidhauser
It all started in Switzerland, more than a hundred years ago, with their cheesemaker great-grandfather, then in Isère, from the 1920s, with their grandfather. Then, it was their father's turn, in 1961, to set up in the very heart of the Savoyard country, as close as possible to dairy production and to create the Schmidhauser company specializing in cheese ripening. Since then, they have cultivated this family tradition, the father, the children, and Max Schmidhauser, to always guarantee quality and authentic taste.
