Originating their craft in Somerset during the 80s before relocating to Scotland to expand, they've managed a significant yet mindful growth from 10 to 130 cows. Their approach, emphasizing a diverse genetic pool with breeds like Fresian, Norwegian Red, Swiss Brown, Dairy Shorthorn, Meuse Rhine, and Jersey, showcases their dedication to producing high-quality dairy through genetic diversity and resilience.

I first tried this cheese at Montgomery's in Somerset (albeit the unpasteurised version) and it was delicious. Such a treat to be able to enjoy it in Australia. It has incredible character, no doubt from maturation in the amazing cheese cave which I was able to visit. It is simply delicious!
