Le Secret des Lys (le SE-krey de-LEE) is a fragile, soft & creamy cheese with a geotrychum surface matured in a small ceramic dish. Based on Saint-Marcellin, Le Secret des Lys has a silky texture and a similar flavour to ripe Brie, but with a delicate crème fraîche tang to the finish. It can be served at room temperature with crusty bread but is also excellent baked in the oven in winter, or on the barbecue during the warmer months.
A little history about Le Secret des Lys
Le Secret des Lys is made high in the mountains of the Franche-Comte region near the village of Cléron by the Perrin family, who also make other well-known mountain cheeses such as Morbier and Raclette.
